Tapioca, also known as Sabudana, is a starch derived from the root Manihot esculenta, and is found from the Amazon to the West Indies. Used globally as a thickening agent, or as the base of a sweet pudding in the west, Tapioca is gluten free and virtually protein free.
Tapioca is also enjoyed as Pearl Tapioca aka Boba and is a popular ingredient in Asian deserts and the beverage Boba Tea. It is also used to make a form of Central American leavening-free flatbread called "Casabe."
