Mediterranean Lamb Chops and Olives
4 loin lamb chops (1 1/4 to 1 1/2 inches thick)
2 tablespoons Mediterranean seasoning blend rub
1 tablespoon olive oil
1/4 cup pitted kalamata olives
1/4 cup small pimiento-stuffed green olives
Sprinkle both sides of lamb chops generously with marinade; press into meat.
Heat oil in medium skillet over medium-high heat. Add lamb chops; cook 3 minutes on each side to sear. Reduce heat to medium-low. Add olives to skillet and cook an additional 4 to 6 minutes or until desired doneness.
Spoon olives over lamb chops.
