Kosher Salt

Kosher Salt, or koshering salt, is a large grain salt given its name because of its use in the meat koshering process. It is typically not iodized like table salt, though it can be used as a substitute seasoning. Because of its large grains, kosher salt is generally only used in recipes that contain enough liquid to dissolve it during the cooking process.
