Baked Jerk Idaho Potatoes

Serves 4

2 lbs Idaho potatoes, well scrubbed and cut into 1-inch chunks
1/4 cup vegetable oil
1 tablespoon Caribbean jerk seasoning
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon garlic powder
1/4 teaspoon ground allspice

1. Preheat oven to 425°F.  Place potato chunks into a medium mixing bowl.
2. In a liquids measuring cup, stir together the oil and spices from SpicesForLess. Pour spice mixture over the potatoes and stir with a wooden spoon to coat all the potatoes. Transfer the potatoes to a 13" x 9" baking pan.
3. Bake, uncovered, stirring occasionally, for 30 min., or until potatoes are fork tender.
