1 1/2 cups cooked quinoa
2 Tbsp coconut oil, melted
1 Tbsp honey
Juice of 1/2 a lemon
1 tsp Curry Powder
1/4 tsp Cinnamon
1/4 tsp Salt
1/4 cup toasted pistachios, chopped
1/4 cup pomegranate seeds
2 green onions, sliced thin
1. In a large bowl, whisk together the coocunt oil, honey, lemon juice, curry powder, cinnamon and salt.
2. Add the quinoa and toss to coat evenly.
3. Stir the pistachios, pomegranate seeds and green onions.
4. Serve warm or at room temperature.
